Lindy’s Banana Bread

1 1/4  cup sugar
1/2  cup butter or margarine softened
2 eggs
1 1/2  cup very ripe banana ( 3 to 4 medium-sized )
1/2  cup buttermilk
1 tsp. vanilla
2 1/2  cup flour
1 tsp  salt
1 cup nuts (optional)
1 tsp. baking soda

Preheat oven to 350
Mix sugar and butter in a large bowl then stir in the eggs until well blended. 
Add the banana, buttermilk, vanilla and beat until smooth.
Stir in flour, baking soda, and salt just until moistened.

Grease bottom of baking pan.
Bake about 1 hour (8-inch loaf) or 1 1/4 hour (9-inch loaf)
(I use a glass loaf dish)

Topping:

Mix together 1/4 cup sugar,  1/2 teaspoon cinnamon, and 1 1/2 tablespoons melted margarine in a small bowl and pour on top of banana bread while cooling.

Best eaten with good friends sitting on a beach overlooking the crystal clear waters of Long Caye.
